Lemon Cheesecake as a Birthday Cake

It was the day of a wonderful man yesterday. I made a lemon / cherry/ caramel cheesecake for him as he likes cheesecake a lot.
With the touch my mother, it turned out to be a yummy cheesecake:

Ingredients:
For the Base:
2 packs of digestive biscuits
2 free range and organic eggs
3/4 cups of butter
1 tablespoon of icing sugar
1/2 teaspoon of cinnamon
1/4 teaspoon of lemon zest

For the Cream:
250 grams of soft cheese [as we live in Turkey now, I used labne cheese]
1 pack of cream [200ml]
1/2 cup of freshly squeezed lemon juice [if you don't like the tangy taste, put 1/4 cup of lemon juice]
1 cup of icing sugar
Vanilla essence
1/2 teaspoon of lemon zest

For the base, mix everything and bake it in the oven for 10 minutes. And let it cool.
Then, beat the cream and put the cream on the top of the cooled base.

I decorated it with pitted sour cherries and dropped caramel on it.

You can find lots of similar lemon cheesecake recipes online, but my mom's touch was to add eggs into the base and bake it. It was absolutely yummy and delicious.

Our adorable 32 month old daughter said 'daddy birthday' to her daddy. You can ask what's interesting about it? Well, I didn't teach her how to say this and I talk to her in English. So, it was really surprising to hear that she figured out how to say 'birthday' in English without me teaching her :)
